(*from organic farming) Properties:Kuzu is a natural gastroprotectant, in fact its root has been recognized as having strong soothing and alkalizing properties, useful for alleviating and resolving various gastro-intestinal problems such as: stomach acidity, reflux, colon and irritable bowel, ulcers. Kuzu is for all intents and purposes a starch that can be used as a thickener, especially in vegan cooking since it is of completely vegetable origin.It is extracted from an oriental climbing plant native to Japan, which in the Asian state has also been used in traditional medicine for more than two thousand years.In Japanese cooking, kuzu is used as a thickener and velveteen especially for soups, soups and vegetable purees, but also for sauces, desserts, ice cream and compotes.
